Beetroot & Goats Cheese Tart

Shortcrust Pastry / 300g Spinach / Beetroot / Soft Goats Cheese / Balsamic Vinegar / Nutmeg / Salt / Pepper / Butter / Thyme / Honey

HEAT oven to 180C

PEEL beetroot and add to pan with boiling water, salt and a few sprigs of thyme

ROLL out pastry thinly and line tart tin

ADD knob of butter and oil into a large pan

THROW spinach on top and allow to wilt

ONCE wilted add grated nutmeg and season well

BLIND bake pastry for 8-10 minutes

REMOVE pastry from oven and softened beetroot from pan

LAYER your tart with spinach at the bottom

SLICE beetroot into rounds and add to top of tart

TOP with crumbled goats cheese

RETURN to oven for 3-4 minutes

DRIZZLE a touch of honey over the top and serve
