Speedy Gonzalez Lasagne - In Pictures
1 Onion / 1 Red Pepper / 2-4 Chilis / Coriander / 2 Tins Chopped Tomatoes / 2 Tins Black Beans / 2 Sml Tins Sweetcorn / Strong Cheddar / 8 Flour Tortillas / 800ml Water / Ketchup / Salt / Garlic / Oil
HEAT oven to 200C
CHOP garlic, onion, pepper and chilies (1)
DRIZZLE oil into large pan
GENTLY cook chopped veg for 10-15 minutes
TEAR coriander stalks from leaves and chop stalks finely
ADD to onions with some salt and stir
POUR in tomatos, then fill each tin up with water and add that too
SQUEEZE in some ketchup and simmer for ten minutes (2)
EMPTY drained tins of sweetcorn and black beans into a bowl
GRATE cheese and add most to bean mix, stir together
CHOP a few coriander leaves and add them too (3)
SPOON a third of tomato sauce into large roasting dish
TOP with top overlapping tortillas
FINISH layer with sweetcorn and bean mix
REPEAT until you run out of room
TOP with tortilla, spoon over some tomato sauce & grated cheese (4)
BAKE in oven for 30 minutes (5)
