4 Chicken Thighs (Skin On, Bone In) / Salt / Pepper / Oil (1)

PLACE chicken on clean board skin down

SCORE flesh of chicken (2)

DO NOT cut all the way through the skin

SEASON generously with salt and pepper

TURN chicken over and season again

HEAT griddle pan on hob

RUB oil into chicken and season again (3)

PLACE chicken skin side down in griddle pan

TURN when skin has gone crispy and golden (4)

COOK for a further 7-8 minutes and serve
