Roast Tomato Spaghetti - In Pictures

Cherry Tomatoes / Red Pepper / Red Onion / Spaghetti / Dried Oregano / Garlic / Basil (1)

HEAT oven to 200C

PEEL garlic, red onion and cut cheeks from pepper

BLITZ garlic (2)

SLICE onion and pepper finely (2)

THROW chopped veg into a roasting tray

POUR cherry tomatoes over the top

DRIZZLE with oil and sprinkle with dried oregano (3)

SEASON with salt and pepper

THROW in oven for 20 minutes

PLACE pan of water on to boil

ADD a pinch of salt and drop of oil when water is boiling

DROWN spaghetti and cook as per packet instructions

REMOVE cooked tomatos from oven (4)

DRAIN water from cooked spaghetti (4)

POUR spaghetti into tomatoes and mix together

SERVE with chopped basil leaves (5)
