Skin On Sweet Potato Fries

Sweet Potatoes / Spring Onions / Thyme / 50ml Balsamic Vinegar / 20g Caster Sugar / Green Chillies / Oil / Salt / Pepper (1)

HEAT oven to 200C

WASH sweet potatoes, don’t peel

HALVE sweet potatoes

SLICE down the length in even rows (2)

CHOP lengths into fries (2)

PEEL spring onions and chop into large chunks

THROW fries and spring onions into baking tray (3)

DUST with thyme (3)

COVER fries in oil and season with salt and pepper (3)

THROW in oven for 20-25 mins

POUR balsamic vinegar into a small pan

ADD sugar and bring to boil (4)

STIR constantly until vinegar is the consistency of runny honey

REMOVE from heat

TAKE fries out of the oven

DISH out onto a plate

SPRINKLE chopped chillies and

DRIZZLE balsamic glaze over the top (5)
