Red Onion & Feta Flatbread Stack
250g Plain Flour / 150ml Warm Water / Olive Oil / Feta / Red Onion / Fresh Coriander / Salt / Butter (not pictured) (1)
PEEL red onion and slice into strips
CHOP the coriander leaves
THROW flour, coriander, water and tblsp olive oil into a bowl
MIX together until it has formed a ball (2)
TURN out onto well floured board (2)
KNEAD for five minutes
LEAVE to prove for 10-15 minutes
POUR oil into pan
ADD knob of butter and chopped onions
COOK for 7-8 minutes on medium heat, stirring occasionally
ROLL rested dough into a sausage shape (3)
DIVIDE dough into eight pieces (3)
ROLL out to 2-3 mm thickness (3)
HEAT a dry frying pan
THROW rolled out flatbread into dry frying pan
COOK for 1-2 minutes each side
ADD crumbled feta to frying onions
LAYER flatbreads with onion feta mix and coriander leaves (4)
SLICE into quarters and demolish (5)
