Stuffed Chicken Breast Salad
I used salami and red pesto to stuff the chicken but you can always freestyle
Chicken breasts / Red Pesto / Salami / Mixed Salad Leaves / Red Pepper / Red Onion / Spring Onion / Cucumber / Salad Dressing
HEAT grill on 200C
BUTTERFLY the underside of the chicken breast
SEASON and add filling (touch of pesto couple of slices of salami)
FOLD chicken back up
PLACE under the grill
TEAR salad leaves
CHOP other veg finely
ADD to big blue bowl
TOSS it like you mean it
TURN chicken regularly making sure it’s cooked all the way through
SLICE chicken and add to tossed salad
DRIZZLE on a touch of dressing, salt and pepper
