Crispy Pesto Mackerel

2 Mackerel / Red Pesto (see recipe) / Salt / Pepper / Oil 

THROW mackerel onto clean board skin side up

SLICE into skin, making thin slits 

HEAT frying pan on medium

TURN grill on full

SEASON fish with salt and pepper

POUR drop of oil into frying pan

PLACE mackerel skin side down in pan

FRY for five mins until skin is becoming crisp

SPREAD dollop of red pesto onto flesh

GRILL for two minutes
