High On Brownies - In Pictures

250g Unsalted Butter / 250g Milk Chocolate / 3 Medium Eggs / 250g Caster Sugar / 150g Self Raising Flour / Butter / Salt / Greaseproof Paper (1)

GREASE baking tin with a little butter

LINE tin with greaseproof paper

BREAK up chocolate and drop into a heat proof bowl (2)

THROW butter in the same bowl

HEAT oven to 180C

STICK bowl in warming oven

STIR when both are starting to melt

RETURN to oven until melted

CRACK eggs into large bowl and pour in sugar (3)

WHISK until combined

BEAT in melted chocolate and butter

SIFT flour and a pinch of salt into mixture

FOLD together carefully with a metal spoon (4)

POUR mixture into lined tin

BAKE for 20-25 minutes

Chocolate Chip Pancakes - In Pictures

150g Plain Flour / 2tbsp Baking Powder / 2tbsp Caster Sugar / 2 Eggs / 200g Creme Fraiche / Chocolate Chips / Butter (1)

THROW flour, baking powder and sugar into bowl

STIR together and dig a well in the centre (2)

CRACK two eggs into separate bowl and whisk

POUR eggs into well and stir together (3)

SPOON creme fraiche into mix and stir into a thick batter

THROW in chocolate chips and stir

HEAT knob of butter with a little oil in a frying pan

SPOON in pancake mix (4)

FRY for two mins each side on a medium heat

SERVE with leftover creme fraiche (5)

Strawberry Shortbread Samiches - In Pictures

150g Unsalted Butter / 75g Caster Sugar / 150g Plain Flour / 75g Cornflour / Strawberries / Whipped Cream / Baking Paper (1)

PRONOUNCE ‘Samiches’ like Larry The Cable Guy

CUT butter into small cubes and leave to soften

CREAM softened butter and caster sugar in a bowl

STOP when creamy

SIEVE in flour and corn flour (2)

MIX together with a fork until you have a crumby mix

PUSH mix together with hands into a smooth dough

TEAR two squares of baking paper

DUST lightly with flour

PLACE dough between squares of baking paper 

ROLL out with pin to 4-5mm thick

PLACE in fridge for one hour

HEAT oven to 170C

CUT chilled dough into cookie rounds (3)

BAKE on baking paper for around 20 minutes

REMOVE and leave to cool

SLICE strawberries (4)

STUFF cream and strawberries between two biscuits (5)

Och Aye Oat Cookies - In Pictures

150g Unsalted Butter / 235g Whole Rolled Oats / 230g Brown Sugar / 1 Egg / 2 Tspn Vanilla Extract / 125g Plain Flour / 1 Tspn Baking Powder / Salt (1)

READ this aloud in a Scottish accent (Shrek’s voice will do)

HEAT oven to 180C

CRACK egg into bowl and beat it gently

ADD vanilla extract

BEAT butter and sugar together until smooth (2)

POUR in egg mixture and beat until mixture has combined

SIEVE flour, baking powder and pinch of salt into bowl (3)

MIX lightly while doing some sort of jig

THROW in oats and stir to make biscuit dough

ROLL tablespoons of mixture into balls and place on lined baking tray

COAT a fork in flour and use to flatten balls into biscuit shape (4)

BAKE until pale golden and remove from oven

LEAVE to cool

EAT cookies while still warm, dipped in milk (5)
